1 cup all-purpose flour
1 tsp. baking soda
1 tbl. sugar
1 1/4 cups buttermilk
1 egg
1 tsp. vanilla
Pinch sea salt
1/4 cup fresh blueberries
Zest of one orange
2 tbl. butter, melted

Directions:
Directions:
Combine flour, baking soda, sugar, and salt in mixing bowl. Mix with fork.
In another bowl, whisk together the buttermilk, egg, vanilla, salt, orange zest, and melted butter. Add the flour mixture to liquid and stir just until combined.
Heat the skillet or griddle over medium-high heat. Lightly coat with butter. Drop batter, 1/4 cup at a time, on griddle, with plenty of space for spreading. Scatter over a few fresh blueberries. Fry until bubbles form and break on the pancake's surface and the bottom is browned. Flip and cook just until done, about 1 minute more.
Garnish with butter, maple syrup and fresh blueberries

Perfect for breakfast or dinner. Substitute banana slices and/or chocolate chips for the blueberries. Toasted pecans are another good option, especially with the bananas.
