2 1/2 cups milk, warmed
1 (1/4 ounce) package dry yeast (1 scant tablespoon)
1 tsp. sugar
1 stick butter, melted
1 tsp. salt
2 cups all-purpose flour
2 eggs, beaten
1/4 tsp. baking soda
Maple syrup and fresh strawberries for garnish

Directions:

In a large mixing bowl, stir together 1/2 cup of the milk, yeast, and sugar. Let stand until foamy, about 5 minutes.
Add butter, remaining milk, salt, and flour. Stir to blend. Cover with plastic wrap and let stand, at room temperature, overnight, or until nearly doubled. (Don't worry about lumps in the batter).
Just before cooking, stir in eggs and soda--this should be a thin, smooth batter. Spray a Belgian waffle pan with cooking spray and preheat. Pour on 1/2 to 3/4 cup batter. Bake until golden and crisp. Serve with maple syrup and sliced strawberries and/or bananas. The batter will keep in refrigerator for up to 2 days.

For a few years, this was Mike's special recipe that he'd throw together on Christmas Eve so we could devour these yummy treats on Christmas morning. Somewhere along the way I took over the Christmas breakfast duties and Mike graduated to making these waffles for his lucky colleagues at MedTel. No wonder they loved him!!
