3 eggs
1 c. cooking oil
2 1/2 c. sugar
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. cinnamon
3 c. flour
2 c. raw zucchini, grated (with skin)

Directions:
Directions:
Combine eggs, oil, sugar, and vanilla. Beat thoroughly. Add dry ingredients and blend well. Stir in zucchini last. Bake at 325 for 70 minutes. Let cool and serve. My oven requires me to bake the bread for 70-75 minutes in order for it to be done in the middle.
