6 oz. white chocolate, coarsely chopped
4 oz. cream cheese (room temp)
4 T butter (room temp)
1 tsp. peppermint extract
2-2 1/2 cups powdered sugar

Directions:
Directions:
Place the white chocolate in a small glass bowl and microwave on high for 1 minute. Remove and stir until smooth. Set aside to cool.

Place cream cheese and butter in a large mixing bowl. Beat on low until well combined, about 30 seconds. Add melted white chocolate and blend on low until just combined, about 30 seconds. Add peppermint and 2 cups of powdered sugar. Blend on low and then increase speed until the frosting is smooth and fluffy. Add more sugar if needed to make a spreadable consistency.

Use as frosting for Chocolate Mint Cupcakes. Use a cake decorating tip to put frosting on cupcakes. I use white chocolate chips if I can't find white chocolate.
