Cafe Rio Pork Recipe

Debbie Hymas' Cookbook


1 small pork tenderloin
1 c. brown sugar
1c. medium Pace Picante sauce

1 pkg. Ranch dressing
2-3 T. salsa verde (green)
1/8 tsp. Tabasco sauce
1/2 bunch cilantro
2 medium cloves garlic
3/4 c. mayo
3/4 c. sour cream
1 lime, juiced
1/4 tsp. grated lime rind (I don't use this)

Cook pork in crock pot for 6-7 hours on low.

Pour dressing ingredients in a blender and mix together. Best if made 24 hours ahead and refrigerated. Serve with port burritos, salads, etc.
