Helen's Jumbo Ginger Cookies Recipe

1/2 cup shortening, softened
1 cup granulated sugar
1 egg
1 tbsp. Fancy molasses
2 cups all purpose flour
1/2 tsp. baking soda
3/4 cups buttermilk
1 tsp. vanilla
1/2 tsp. salt
1 tsp. ground ginger
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves

Preheat oven to 400 degrees F.
In a large bowl combine sugar, shortening, egg and molasses. Beat until smooth and fluffy.
Sift the dry ingredients together. Add the flour mixture to the shortening mixture alternating with the buttermilk and vanilla. Start and end with the flour. Chill well.
Drop by rounded teaspoonfuls onto lightly greased cookie sheet.
Bake 10-13 minutes or until cookies are lightly browned - depending on your oven this may take a bit longer.
Spread with Butter Icing below while the cookies are still slightly warm.

Butter Icing:
1/4 cup butter
2 cups sifted icing sugar
1 teaspoon vanilla
2 Tablespoons heavy cream
Beat all together until smooth and creamy.
This icing will harden nicely when completely set making cookie trays easy to put together.

This is a recipe that was given to me by one of our beloved volunteers a few years ago. I have used it every Christmas since then and they seem to be the first ones gone on Christmas cookie platters. It's a real winner!
