6 cups rolled oats (not quick cooking or instant)
2 cups mixed nuts and seeds (try sunflower seeds, pumpkin seeds, slivered almonds, cashews, walnuts, sesame seeds, flex seeds)
1 cup unsweetened coconut (optional)
1 cup of liquid sweetener (ex: honey, agave, maple syrup or try a reduction of any simmered on the stove with apple juice until thick)
1 cup of dried fruit (dried cranberries, dried cherries, dried apricot, raisins, goji berries, dried blueberries, dried apple slices)
A few teaspoons of cinnamon (to taste)
Pinch of salt

Put the oats in a large bowl. Chop the nuts for bite-size clusters or leave them whole for heartier clusters and add to the oats. Pour the sweetener over the oat and nut mixture and stir with a wooden spoon. Add the cinnamon and salt. Pour the mixture on baking sheets in a thin layer and bake in oven heated to 350F for 20-30 minutes. Check on mixture every 5-10 minutes to prevent burning. The longer the mixture left in the oven, the crunchier the granola will become. Once the granola is finished baking, remove from oven and place mixture back in the large bowl and add the dried fruit and stir. Do not place dried fruit in with nuts prior to baking as the dried fruit will burn. Let granola cool. Once cool, keep granola in an air tight container.
