Directions:
Place eggs in a saucepan large enough to hold them in a single layer. Add cold water to cover eggs by 1 inch. Heat over high heat just to boiling. Remove from heat. Cover pan and let eggs stand in hot water:

- about 2 minutes for soft boiled eggs.
- about 3 - 4 minutes for medium boiled eggs.
- about 12 minutes for hard boiled eggs.

Drain immediately and serve warm, or cool completely under running water or in a bowl of ice water. Refrigerate.

Warm eggs can be served on toast for breakfast or peeled and chilled to have on hand for deviled eggs, salads, sandwiches, and snacks at any time of day.
