2 cloves garlic, minced
1/2 t. dry mustard (1 t.)
3-4 T. lemon juice (but add more for preference)
1 t. Worcestershire (2 t.)
2 oz. can anchovies or 1 T. anchovy paste (optional)
1 cup vegetable oil
2 T. vinegar
1/2 t. pepper
1/2 c. Parmesan cheese

Works well in food processor but you'll get better results with a blender. If you do not want to use anchovies, use the amounts listed in parenthesis. Combine garlic, mustard, lemon juice, Worcestershire, undrained anchovies (if using them) and vinegar. Blend until smooth. With blender still running, begin pouring oil in a narrow stream. The dressing will emulsify, thicken and become creamy. After adding oil, turn blender off. Add pepper, Parmesan and a touch of salt (if not using anchovies).
