Barbecue Sauce:

2 t olive oil
1/2 C finely chopped onion
1 T chopped garlic
1 t cumin
1/4 to 1/2 t ground red pepper (I use 1/4 t)
1 C tomato sauce (8oz. can)
3/4 C water
1/4 C ketchup
2 T Worcestershire sauce
2 T firmly packed dark brown sugar
2 T cider vinegar

Spice Rub for chops:

1 t table salt
1 t cumin
1/2 t freshly ground black pepper
1/8 t ground red pepper
2 t olive oil (browning pork chops)

Four 1 - inch-thick pork loin rib chops ( 6 - 7 oz. each ( excess fat trimmed)

Directions:
Make barbecue sauce: Heat oil in a 3-quart saucepan over mediun meat. Add onion and garlic; cook until onion softens, 3-5 minutes. Stir in cumin and red pepper; cook 3 minutes. Stir in remaining ingredients; bring to a boil. Reduce heat and simmer, stirring occasionally, 1 hour. (Can be made ahead). Cool. Store in airtight container up to 1 week. (To reheat: Microwave sauce 3 minutes on defrost.)
Heat oven to 350. Combine salt, cumin, black pepper and red pepper in a cup. Rub mixture on both sides of chops. Heat oil in a large nonstick, ovenproof skillet over medium-high heat, 2 minutes. Add chops and cook 2 minutes per side. Spoon 2 T barbecue sauce on top of each chop. Bake chops 8-10 minutes, or until instant-read thermometer registers 155 when inserted in center of each chop. Serve chops with additional barbecue sauce.
