MEAT:
1 lb ground beef
1 1/4 tsp. salt
1/4 tsp. ground black pepper
1/2 c. chopped onions
1/2 c. chopped bell pepper
1 egg
8 ounces canned diced tomatoes, with the juice
1/2 c. quick cooking oats (or until meat is firm. it usually takes between 1/2 c. to 1 cup for me.)

SAUCE:
1/3 c. ketchup
2 tbsp brown sugar
1 tbsp prepared mustard
(I skip this step & just use bbq sauce instead)

MEAT: Preheat oven to 375 degrees. Mix all meat loaf ingredients well & place in a baking dish. Shape into loaf.

SAUCE: Mix ingredients for topping & spread on loaf. Bake for 1 hour.
