1 T EVO
1 1/2 cups sliced baby portabella mushrooms
1 1/2 cups shredded jalapeņo montaray jack cheese
1/2 cup red onion
2 cups water
1 cup quick cook barley
salt and pepper to taste ( I didn't use any)

Directions:
Directions:
1. In a 2 quart sauce pan warm olive oil. Add mushrooms and onions. Stir until soft (about 3 minutes).
2. Add water and bring to a boil. Stir in barley. Cover and let sit about 10 minutes.
3. Stir in cheese. Serve
