Olive oil
Salt
1 small onion, chipped
6 cloves garlic, minced
6 kale leaves, stems removed and chopped
1 pound Italian sausage
1 cup of Quick-Cooking barley
2-32 ounce beef broth
2 cups heavy cream
1 ounce Parmesan Cheese to sprinkle on top
Fresh basil (optional)

Directions:
Directions:
1. Saute the chopped onion in olive oil; add salt to taste. Cook until tender; add garlic and sausage. Cook through then add chopped kale; add salt if necessary.
2. Add beef broth and bring to a boil; add barley. Reduce heat and simmer for 25-30 minutes. Add cream and basil. Stir and simmer for 5 more minutes.
3. Serve with Parmesan Cheese and a little extra basil on top.
