3 cups sugar
3/4 cup light corn syrup
1/2 cup water
2 egg whites
1 tsp almond extract
1 cup finely chopped nuts (black walnuts are the best)

Directions:
Directions:
Place sugar, light corn syrup and water in a heavy saucepan. Cook over medium heat to hardball stage (252) without stirring! Remove from heat and allow to cool to 220 still without stirring.

Put egg whites in a separate mixing bowl and beat on high until soft peaks form (1-2 minutes). Gradually add the syrup mixture in a fine stream (this should take 2 minutes to add all the syrup). Reduce speed to medium and add almond extract. Continue beating 20 to 25 minutes or until mixture starts to become dry.

Gently fold in chopped nuts and drop by teaspoonfuls onto wax paper or a greased pan. Cools very quickly so work fast!

Note: All bowls and utensils must be absolutely grease-free.
