4 eggs or 8 egg whites beaten
1 small yellow onion chopped fine
2 medium sized tomatoes chopped fine
1 tbsp canola or olive oil
1 tbsp garam masala
1/2 tsp turmeric
1 tsp red chilli powder (adjust the amount to your tolerance level)
2 tbsp fresh chopped cilantro
salt to taste

Heat a frying pan (i like to use nonstick for this dish) add the oil and coat the pan evenly. Now add onions to the pan and saute for 5 minutes on medium heat until onions are translucent. Then add the tomatoes, garam masala, turmeric, red chilli powder, salt and saute for another 5-7 minutes on medium heat until the tomatoes are mushy and blended into the entire mixture. Turn the heat to low and add the beaten eggs and cilantro. Mix the mixture and keep on stirring until the eggs are scrambled hard.

Low Calorie Option: (1) Use 8 egg whites instead of 4 whole eggs; (2) Use canola oil spray (I like the whole foods Spectrum brand for high heat) instead of the oil.
