10 lamb rib chops
1/2 cup olive oil
1/4 cup balsamic vinegar
2 cloves garlic, minced
1 tablespoon fresh rosemary, chopped ( I used dried and it was good)
1 1/2 tsp dried oregano
1 tablespoon honey
# 2 teaspoons Dijon mustard

Mix ingredients for marinade.

The little chops are cut one bone thick and are about 1.5 oz each. I find 3-4 for most women and 5-6 for most men sufficient with proper sides. The taste is strong and is different than a piece of steak ect. A little goes a long way.

I garlic salt and pepper the chops and throw them in a bag with marinade for about 6 hours. Grill hot on open flame turning only once. The meat is very lean and tends to stick so make sure grill is lubricated before cooking. The fat on them gets crisp and adds an amazing complement to the strong lamb taste.

I think the extra oil makes them easier to cook and the sweetness from the balsamic and honey adds to the lamb and tones it down. )

Greek salad as a starter and couscous and grilled veggies nice sides. Also buttery garlic pasta with fresh chives if you want to richen it up and bypass the couscous.
