3 to 3 ½ pounds baby back ribs (or spareribs)
1 cup water
¼ teaspoon pepper
2 tablespoons cornstarch
½ cup vinegar
½ teaspoon ginger
1 teaspoon salt
1/3 cup brown sugar
2 tablespoons soy sauce
1 to 2 cloves garlic, crushed

Directions:
Directions:
Sprinkle meat with salt and pepper. Brown meat. (Put a couple slices of onion in for extra flavor while browning, if desired.) A non-stick pan works well.

Add water. Cover and simmer 1 hour. Remove meat from pan and skim fat off.

If desired, put ribs on grill or under broiler on each side to cook off membrane on bone side, brown meat, and cook off any fat.

Combine brown sugar, cornstarch, soy sauce, vinegar, garlic and ginger. Add to liquid in pan. Cook and stir until thick.

Add ribs. Spoon sauce over ribs. Simmer 1 to 2 hours, covered. Turn occasionally.
