"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Mix the above ingredients together, except for the jelly. Drop spoonful of cookie mix in powdered sugar, then place on cookie sheet. Bake at 350 degrees for 7-10 minutes. Keep an eye on the cookies. They can burn very easily!

Once the cookies have cooled down, use a jar of your favorite raspberry jam, seedless, and spread it on the bottom of one cookie. Then place another lemon cookie on the other side of the jelly.

Voila! Lemon raspberry cookie sandwiches that are delicious and addicting!
