1 Tbsp vegetable oil
1 cup chopped onion
1 cup chopped celery
1 lb ground beef
1 cup uncooked brown rice
1 can cream of mushroom soup
1 can chicken soup
2 Tbsp soy sauce
2 cups bean sprouts (canned sprouts can be used)
1 8-oz can water chestnuts (drained and sliced optional)
1 3-oz can chow mein noodles
1 10-oz package frozen peas

Directions:

Preheat oven to 350°. In a large pan, saute' onion and celery in vegetable oil, for 5 minutes. Add ground beef and brown well. Stir in rice and cook until transparent. Finally, stir in soups, soy sauce, bean sprouts and water chestnuts. Bake in a large casserole dish, uncovered for 30 minutes. Stir in 1/3 can chow mein noodles and frozen peas, adding water if mixture is too dry. Bake for 30 more minutes or until rice is just tender. Sprinkle the remaining noodles on top and bake for 10 minutes longer. Serve immediately.
