7 oz penne pasta
½ lb Italian sausage, browned
14.5 oz can petite diced tomatoes
6 oz fresh spinach
1+ cups mozzarella cheese, grated

(This is how I do it to dirty just one pan.)

Cook pasta in a large pan. (You'll need a large one to give room for the fresh spinach later)
While the pasta drains in a colander, brown and drain Italian sausage; add tomatoes and heat through. Stir in pasta. Pour spinach on top of pasta mixture in pan. Stir in as soon as it's stirrable. (You can microwave the spinach slightly to avoid the space issue in the pan if you desire.) Stir in the mozzarella.
Serve immediately with bread for a one-dish dinner.
