7 Tbs butter
4 Tbs flour
2 cups milk
1 tsp salt
1/4 tsp pepper
1 tsp onion powder
1/2 tsp garlic powder
pinch of cayenne
8 ou grated cheddar cheese
4 ou grated gruyere or swiss cheese
4 ou grated fontina or provolone or havarti cheese
4 ou grated parmesan cheese
2 tsp hot sauce
16 ou cooked pasta

Directions:

Melt 4 Tbs butter over low heat. Whisk in flour and cook for 2 minutes, whisking constantly. Slowly whisk in milk. Increase heat to medium and whisk until mixture thickens. Remove from heat. Add seasonings and cheese. Stir until cheeses melt and mixture is smooth and creamy. Put the remaining butter in a casserole dish and melt in oven. Remove and coat bottom and sides of dish. Layer half the pasta, sauce , then past and sauce . Bake at 350º for 45 minutes.
