Butter
Water

Romano

Directions:
Directions:
1 1/2 pounds ground meat, beef, veal, pork. Saute in butter and add 1/4 cup water so meat won't stick. Add Salt and pepper plus 1/2 teaspoon nutmeg. Cook 3/4 hour or until water disappears.

In a large mixing bowl, add 1 cup bread crumbs, 1 cup grated Romano cheese. Mix well and add 1 egg. Mix well.

Then add cooked meat to bread mixture and work with spoon until mixture forms into a ball. If it is too soft, add more bread and cheese.
Make pasta dough. Roll out very thin and cut into circles or square, place marble sized amount of filling in each shape and make a triangle, and shape to look like mini bell buttons.

Cook in chicken broth.

This is Ryan's grandmother's recipe for Capletts. It is her own authentic Italian fair. I first attempted these in 2009 for Christmas to surprise Ryan. In 2010, Sidney and I made them again. I have a feeling it is a new family tradition. They weren't his grandmother's for sure, but after his third trip back for refills, I decided they weren't too bad either.
