Directions:In a large tall granite-ware roaster, use a rack to hold meat off bottom slightly. add just 1/4 inch water to bottom of pan. Put ham in on rack with fat side up. Rub a thick coating of brown sugar at least 1/4 inch thick over top of ham. Pat it on, it sticks. Open Tones pkg and put 15 or 20 cloves down in bottom. The rest of the cloves sprinkle on top of the ham and brown sugar. Put in oven covered and bake for 12 to 14 hours at 225º. Don't peek. Your house will smell great. Pull out and let cool with lid still on. When cooled enough to touch, remove fat and whatever rind falls off. Ham will pull apart stringy. Cut longer pieces into 1/3rds or 1/4ths and layer on serving platter. Serve as chunks for finger food or for meal. As you fill platter, keep basting with juice from pan. This is important! Ham absorbs juice and "Candies" up. You are reading this right. You cook this ham overnight. Hope you get to try. It is worth the effort. My great friends Mike and Jeanne Bollinger taught me this recipe. I make it a lot for parties and family gatherings. People like picking up a chunk of ham and eating it. |
