1 t. olive oil
1 magic mushroom mixture (found in vegetarian and vegetables)
1 c. shredded chicken (deli rotisserie chicken)
1 c. baby spinach or arugula (I use spinach)
1 T. red wine vinegar
2 (10 inch) flour tortillas
1 c. shredded gruyere cheese
cooking spray

In a large nonstick skillet heat 1/2 c. of the mushroom mixture. Add vinegar, cook 30 seconds . Arrange half of the mushroom mixture over half of each tortilla. Top each tortilla with 1/2 c. chicken, 1/2 c. spinach or arugula, and 1/4 c. cheese. Fold tortillas in half. Wipe pan clean with a paper towel. Heat pan over medium heat. Coat pan with cooking spray. Add tortillas to pan. Place a heavy skillet on top of tortillas: Cook 2 minutes on each side or until crisp. Cut into thirds or fourths.
