1 Chicken, cut into its eight pieces (or More)
1 jar apricot preserves
1 bottle western dressing
1 tbsp prime rib rub (from Miscellaneous section)
salt and pepper to taste

Directions:
Start charcoal fire and wait for coals to turn gray. Put grill grate on a high setting away from the coals. Put chicken pieces on the grill leaving the skin on them. Salt and peppper them lightlly. Back on the stove in a sauce pan, put the western dressing and apricot preserves and prime rib rub in a sauce pan and carefullly just bring to slight boil. After the chicken on the grill starts cooking over the coals baste with this sauce and move pieces away from direct heat. Finish cooking chicken indirectly with lid closed basting every 5 to 10 minutes. This sauce is sweet and starts carmelizing, which is what you want. You just don't want to end up with black charred pieces. I think you will love this recipe. I learned of it at a party for my Cousin Alex Hartley's boy Scott who had just returned from from his Iraq tour of duty.
