1 rack pork baby back ribs
5 cloves garlic, minced very fine
Lea & Perrin’s worchestershire
2 teaspoons salt
1 teaspoon black pepper
3 teaspoons Zatarain’s seasoning (or Tony Chachere's)
1 bottle Kraft Honey BBQ sauce, or your favorite brand

In small bowl, mix garlic, salt, pepper and Zatarain’s seasoning. Prepare ribs as normal, removing fat and silver skin. Sprinkle with worchestershire, and then rub in ½ of the garlic/spice mixture. Flip the ribs to the other side and repeat the process. Wrap tightly in plastic wrap and refrigerate overnight.

Preheat oven to 200º and place ribs in a 13 x 9 baking dish (cut the rack in ½ if you need to!), with about ¼ inch of water in the bottom. Seal tightly with aluminum foil and bake for 5 hours. Remove ribs from pan and strain pan drippings into a small saucepan. Reduce the drippings over medium heat until you are left with about ½ to ¾ cup of juice. Add ½ bottle of BBQ sauce and heat through, while stirring.

Heat your grill and ensure one side is cool – stack the charcoal on one side of the pit, OR, turn the burners off on one side of your gas grill. Place the ribs on the cool side of the grill/pit and baste with BBQ sauce mixture, every 10 minutes (I do each side two or three times). Remove ribs from grill and wrap in foil. Allow to rest for 15 minutes, and then serve. The ribs will be “fall of the bone tender” and absolutely delicious!

I prefer Zatarain's Cajun Seasoning over Tony Chachere's. It's less peppery and just the right blend of spices!
