2 lbs. Soldier beans
2 tsp. dry mustard
1/2 lb. salt pork
1/2 tsp. pepper
1/4 C. sugar
1 1/2 tsp. salt
1/2 to 2/3 C. molasses
1 medium onion

Directions:
Directions:
Soak beans overnight in cold water. In the morning, parboil beans until skins crack when blown upon. Cut onion in quarters and put in the bottom a pot. Add beans. Cut through rind of salt pork to 1/2” and place on top of beans. Mix remaining ingredients with 1 pint boiling water. Pour over beans and pork. If necessary, add more boiling water to cover. Bake at 300 degrees for 6 or more hours, adding more boiling water as beans cook. Serve with steamed brown bread.
Variations:
1: Substitute maple syrup for molasses
2. Add 3/4 to 1 cup catsup or chili sauce and 1 Tbsp. vinegar to beans before baking
3. Use 1/2 C. honey in place of molasses and sugar
