Banana Bread Recipe

1 3/4 cups flour
1/3 cup shortening
1 1/4 teaspoons baking powder
2/3 cup sugar
1/2 teaspoon baking soda
2 eggs, slightly beaten
1/2 teaspoon salt
1 cup mashed bananas ( 2-3 bananas)

Sift flour, measure. Add baking powder, soda and salt. Sift again.
Cream shortening, add sugar gradually; continue beating until light and fluffy.
Add eggs and mix until smooth
Add dry ingredients alternately with mashed bananas, stirring just enough to combine throughly. Do not beat.
Turn into a greased loaf pan. 9 1/2 " x 5 1/2 ". Bake in moderate oven at 350 for about 1 hour.
Can also add nuts
