2 cups of broccoli, cut into florets
2 carrots, sliced crosswise
1 zucchini, sliced crosswise
2 stalks of celery, sliced
1 tomato, cut into 8 pieces
1/2 medium onion, chopped
2 cloves of garlic, chopped

1 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp grated Parmesan cheese
Salt and pepper to taste

Preheat oven to 375º

In a casserole dish, combine all the ingredient except cheese. Stir to combine well. Bake until veggies soften and slightly caramelize, about 25 minutes. When done sprinkle with Parmesan cheese and bake for 5 more minutes.

Did you know, add garlic immediately to a recipe if you want a light taste of garlic, and at the end if you want a stronger taste of garlic.
