Artichoke Nibbles Recipe

2 6oz. jars Marinated artichokes
1 small onion
1 clove garlic
4 eggs
1/4 cup fine dry bread crumbs
1/4 tsp salt
1/8 tsp pepper
1/8 tsp oregano
1/8 tsp tabasco
2 cups shredded sharp cheese (usually use white cheddar)
2 tbsp minced parsley

Drain oil from 1 jar of artichokes. Use this to saute 1 small onion chopped and 1 clove minced garlic. Drain other jar artichokes and chop artichokes from both jars.
In bowl beat together eggs, add crumbs, cheese, spices, salt, parsley. Then add artichokes.
Turn into greased 7 x 11 pan and bake at 350 for 30 minutes until set.
Cool in pan and cut into 1" squares. Serve cold or hot (can reheat at 325 for 10 to 12 minutes.
Makes 6 dozen
