3 tbsp. olive oil
2-3 zucchinis, sliced
2-3 yellow summer squash, sliced
1 green pepper, sliced
1 onion, sliced
2 cans diced tomatoes with Italian seasoning
Parmesan cheese
Sea salt/pepper

Directions:
Directions:
In large skillet, heat olive oil. Add sliced zucchini, summer squash, onions and green pepper. Saute for several minutes. Add 2 cans of diced tomatoes, salt and pepper to taste. Shred Parmesan cheese over vegetables before serving.
