Pumpkin Chocolate Chip Cookies Recipe

1 1/3 cup sugar
1/2 cup shortening
2 eggs beaten
1 cup pumpkin
1 tsp. vanilla.
2 1/2 cup flour
1 tsp. salt
4 tsp. baking powder
3/4 tsp. nutmeg
3/4 tsp. cinnamon
1/4 tsp. ginger
1/2 cup chocolate chips

Cream sugar and shortening. Add eggs, pumpkin, and vanilla. Mix well. Mix together the rest of the dry ingredients, except chips, and slowly add into the first mixture. Add chocolate chips. Drop by large spoonfuls onto a greased cookie sheet. Bake at 375 for 8-10 minutes.

VARIATION: Omit chocolate chips and instead add raisins, craisins, nuts or any thing you might choose.
