Deluxe Chicken Casserole Recipe

1 1/2 c cooked chicken, diced
1 1/2 c rice, cooked
1 c chopped celery
1/2 c walnuts or pecans, chopped
1 can of cream of chicken soup, undiluted
2 tsp onion, finely chopped
1/2 tsp salt
1/2 tsp black pepper
1 tbsp lemon juice
3/4 c mayonnaise
1/4 c water
3 hard-boiled eggs, sliced
1 c potato chips, coarsely crumbled

Combine first 10 ingredients in a large bowl. Set aside. Combine mayo and water; stir with a wire whisk until smooth. Add mayo mixture to chicken mixture. Gently fold in egg slices. Spoon mixture into a greased 11x17 inch baking dish. Top with potato chips. Bake uncovered at 400 for 15 mins or until bubbly.
