Pam® vegetable spray
2 large brown onions, chopped
2 carrots, sliced
4 T. vegetable oil
1 (5 lb.) beef brisket
salt and pepper
garlic powder
˝ cup ketchup
1 (14 oz.) can whole cranberry sauce
1 (12 oz.) can regular Coca Cola® (regular, not diet; this is the secret ingredient!)
1 envelope Lipton’s® onion soup mix

Directions:

Heat oven to 350⁰. Spray frying pan and Dutch Oven with lots of Pam Spray. Place onions and carrots in frying pan on stove top. Brown in oil until translucent. Remove from pan. Season brisket with salt, pepper and garlic powder. Spray Pam in the pan again. Working over medium-high heat, quickly brown brisket on both sides to sear in juices. Remove brisket from pan. Take all the remaining ingredients and place in the same pan just used for browning the prior items. Bring to slow boil for 1 minute, stirring constantly. Remove from heat. Place brisket in Dutch Oven. Pour onions, carrots and all other ingredients around and on top of the brisket. Cover tightly. Place in oven and bake for 3 to 6 hours, until tender. Remove cover and bake for additional 15 minutes to caramelize. Allow to cool slightly. Cut into thin slices across the grain of the meat to avoid shredding. Serve with mashed potatoes.

Aunt Ruth passed away 25 years ago. This recipe has been used by our family for as long as I can remember. Wait until you taste it! The ingredients meld together to make the most mind=blowing gravy you’ve ever experienced. Promise!
