2 T. vegetable oil
4 lb. country style pork ribs
1/2 c. dry sherry
1/2 c. water
1/2 c. firmly packed brown sugar
1 tsp. salt
1 tsp. celery seeds
1 tsp. chili powder
1/8 tsp. pepper
2 c. water
1/4 c. white vinegar
1/4 c. Worcestershire sauce
1 (12 oz.) bottle chili sauce
1 medium onion, chopped

Heat 1 T. oil in a large skillet over medium-high heat. Brown half of ribs in skillet; set aside. Brown remaining ribs in 1 T. oil. Return ribs to skillet; add sherry and 1/2 c. water. Bring to boil. Cover, reduce heat, and simmer 1 1/2 hours.

Meanwhile combine brown sugar and remaining 9 ingredients in a 2-quart saucepan. Bring to a boil; simmer, uncovered, over medium heat 1 hour.

Transfer ribs to a 13x9-inch pan; pour sauce over ribs. Bake, uncovered, at 300º for 1 hour; basting occasionally.
