4 tsp. Olive Oil
1/2 cup green onions (diced)
2 cups mushrooms (I use 1 can olives instead)
1 (4 oz.) can green diced Ortega chiles
1 1/2 cups mild picante sauce
12 oz. cooked shredded chicken
2 cups cooked rice
6 Tbsp. light sour cream
4 oz. grated cheddar cheese
sprinkle of paprika

Heat oil & sautÚ mushrooms & onions stir in chiles & picante sauce. Cook & stir on medium heat for 5 min. Place chicken in the a casserole dish, cover with all but 1/2 cup of the sauce. Bake at 350║ for 20-30 minutes.
Combine rice, sour cream & 1/2 cup sauce together, spread over chicken. Sprinkle on cheese & paprika. Heat 5 more minutes or until cheese melts.
***After I cook the sauce I put everything together (except the cheese & olives) in a bowl & mix it, then I throw it in a casserole dish, sprinkle the cheese & olives on top. Bake at 350║ about 30 minutes.
