2 large onions, thinly sliced
1/2 green pepper, thinly sliced
2 c. chopped celery
1 medium can of tomato sauce -- 3 cans of water
1/4 c. vinegar
1/2 c. sugar
6 country style pork ribs, rinsed and patted dry
Garlic powder ( or fresh garlic)
Salt and pepper
Paprika
Saurkraut, rinse in cold water and drain well, optional

Directions:

Thinly slice onion, green pepper and celery into the bottom of a 13x9 inch pan. Rub each rib with fresh garlic and sprinkle with paprika, salt and pepper. Place ribs in pan on top of onions and peppers. Combine tomato sauce, water, vinegar and sugar; pour over meat.
Bake at 325º for 45 - 60 minutes basting occasionally.

Optional: during the last 15-20 minutes of cooking time cover pork with saurkraut. Heat remaining time or until hot.

You might want more of a tomato base so you can adjust the water and tomato sauce mixture to suit your taste. I definitely recommend adding the saurkraut.

This is a great wintertime meal with mashed pototoes.
