2-1/2 cup fin flour
1 cup unsalted butter (softened )
3/4 cup powder sugar
1/2 tsp baking powder
1 tsp.vanilla extract
1 egg
pinch of salt
any jam you like
powder sugar to decorate

In a large bowl, beat butte, sugar until creamy. Beat in the egg and vanilla.
Sift flour,salt and baking powder and into bowl.
Blend in with a spoon, then mix the ingredients with your hands to form the dough if to soft add little flour.
Cover and chill for 30 minutes.
On a flat surface sprinkle some flour, roll out dough to 1/8-inch thickness, using cookie cutter, cut into circles, place slightly apart on a baking sheet.make the same amount circles and use a small pip to remove the center.
Preheat oven to 350F. Bake cookies for 15 min or until lightly golden.
Don't remove until cool completely. Using a spatula, remove cookies gently
Spread 1 tsp of any flavor jam you like, onto one slice of cookie and press the other slice of cookie together to form a sandwich. Sift powdered sugar on the top to decorate. place in a serving dish.
