Ingredients:  
Ingredients:  
5 slices bacon, chopped and cooked, save fat
1 onion, chopped
1/2 c. celery chopped
1/2 c. pepper chopped
1/2 lb. ham, cut into pieces
8-12 oz blackeye peas (from produce section) fixed as directed
1 t. dried thyme or use fresh chopped
Emeril Essence
1 qt chicken stock
Bay leaf
Cooked rice 3 cups

Directions:
Directions:
Set aside cooked bacon.
Saute onion, celery, pepper in oil. Saute ham.
Add seasonings and cook few minutes.
Add stock, peas, bay leaf.
Cook until peas tender, should not take long.
Taste for seasoning
