5 slices bacon, chopped and cooked, save fat
1 onion, chopped
1/2 c. celery chopped
1/2 c. pepper chopped
Can add chopped jalapeno
1-2 carrots chopped
2-3 cloves garlic
1/2 lb. ham, cut into pieces
12 oz chicken andouille sliced
1 lb black eye peas prefer Rancho Gordo
Kombu one strip
1 t. dried thyme or use fresh chopped
Bay leaf
2 T tomato paste
1-2 T Emeril Essence
1 qt chicken stock

Cooked rice 3 cups
Top with chopped parsley

Soak peas over night covered by 2 inches water. Set aside cooked bacon.
Saute onion, celery, pepper , carrots in oil. Saute ham, sausage and garlic.
Add stock, peas, bay leaf. Boil 15 min partially covered. Add Kombu. Then add seasonings. Adjust the water until covered by about an inch. Reduce to gentle simmer until soft about 35 min. Add tomato paste and cook 15 min. Season to taste. Discard kombu. Add crumbled bacon.
Taste for seasoning
Serve over rice and add parsley
