DOUGH: (1-12 inch crust)
1 envelope of dry yeast
1 teaspoon of sugar
1 1/4 cup of lukewarm water
1 3/4 cups of unbleached plain flour
1/4 cup yellow cornmeal
2 tablespoons sugar
1 teaspoon basil
1/2 teaspoon of salt
2 tablespoons olive oil

1. Combine 1 envelope of dry yeast, 1/4 teaspoon of sugar and 1 1/4 cups of lukewarm water. Mix a little and let sit for 6-8 minutes.
2. Combine 1 3/4 cups of bread or unbleached plain flour, 1/4 cup yellow cornmeal with 1/2 teaspoon of salt, 2 tablespoons sugar, 1 teaspoon basil in a bowl.
3. Pour the yeast/water combination into the bowl and mix until ready to knead. Mix with a spoon until you have a neat ball.
4. Prepare a lightly sprinkled surface with flour. Turn out dough and knead for around 2-3 minutes. Lightly cover your finger tips with flour if the mixture is a little sticky.
5. Place dough ball in bowl with 2 tablespoons olive to coat ball. Cover with plastic in a warm place and let rise for 1 hour or until doubled in size.
6. Roll out by hand for a 12'' base.
7. Press out dough to form a slight lip.

TOPPING:
1 cup Pizza sauce
12 oz. Shredded mozzarella cheese
Ground beef, crumbled
2 Italian Sausage links, removed from casing, crumbled
Pork Sausage, crumbled, cooked
Pepperoni, sliced
Canadian bacon, diced or
Ham, diced
Mushrooms, sliced
Onion, sliced
Green bell pepper, seeded, sliced
Grated Parmesan cheese

1. Transfer to an oiled 12−inch pizza pan or baking stone, folding the excess over to make a small rim.
2. Spread with pizza sauce; sprinkle with all but a handful of the mozzarella cheese.
3. Sprinkle with meats and vegetables.
4. Top with remaining mozzarella and Parmesan cheese.
5. Let rise in a warm spot about 25 minutes.
6. Heat oven to 475 degrees.
7. Cook in a pre-heated over (500F) for 8-12 minutes. Times will vary based on different ovens. When the crust is golden brown, and the edges begin to darken, the pizza is ready.
8. Remove from oven, let rest for 5 minutes before slicing

Go easy of the toppings. Less is better. Too many toppings will make the crust soggy. Three minutes before pizza is done, add a handful more of your favorite cheese.
