1 lb. farmer cheese
1 lb. cream cheese
2 egg yolks
2 Tbls. melted butter
1/2 tsp. salt
1/2 tsp. sugar
1 c. flour
4 whole eggs, x-large
1 c. whole milk
another 2 Tbls. melted butter plus 1 T oil for pan
6 T. sugar combine with 1 1/2 T of cinnamon

Filling: Cream together farmer cheese and cream cheese. Add egg yolks and melted butter. Mix cinnamon and sugar. I go a little heavy on the cinnamon because I like the taste. The cheese looks brown in the bowl, but does not look brown when cooked. Add the 6 Tbls of the mixture to the cheese and blend until smooth. Set aside.
Blintzes shells: Sift the flour, sugar and the salt together. Beat the 4 eggs until light. Add the milk and the melted butter. Slowly beat in the flour mixture to make a smooth batter. Let sit for 5 min. or make the batter first and it will set while you make the filling.
Butter lightly an 8 in. skillet with the butter and oil mixture. Add approximately 1 1/2 Tbls. of batter or about a third of a soup ladle and swirl around to coat the pan. It needs to be slightly thick to hold the filling. Cook over medium high heat until the edges are dry and it shakes in the pan. Turn the cooked side out on wax paper. Should make about 14 blintzes shells
To fill, place a 2 T. in the bottom third of each blintz. fold the sides over, the bottom up and roll onto the top. Place seam side down in a buttered 11x9' dish. Brush with egg wash made from 1 egg yolk and a bit of milk or cream and freeze uncovered until hard. Then you can cover them for later use. If for immediate use, butter a large saucepan. Place seam side down and heat. Turn over and do the same. If baking for later use. Remove cover and place in 350º oven for about 15 min. or until brown. Watch them as they have butter on the top and you don't want them to burn. Yield 14.
