Large russet potatoes, one for each person
1 Tbs olive oil
1/2 Medium onion, finely diced
1 lb Chicken breast, boneless and skinless
1 Jar of your favorite BBQ sauce
Butter, sour cream, cheese, or green onions if desired.
Salt and pepper to taste

Directions:
Directions:
Heat oven to 400º. Wash and dry potatoes, spray with cooking spray and salt outside. Pierce potatoes with fork all over. Bake potatoes for 40-50 minutes until they are done. While potatoes cook, dice chicken breast. Heat olive oil in skillet, add chicken and cook 10 minutes, stirring well. Add finely diced onion, cook until chicken is no longer pink. Add BBQ sauce, heat all together well.
Once potatoes are done, slice down center and add butter. Add heaping BBQ chicken mixture and any other toppings you desire.
