2 tablespoons red wine vinegar
1 1/2 to 2 teaspoons hot sauce
1 1/2 teaspoons vegetable oil or extra virgin olive oil
1 garlic clove-minced
1/8 teaspoon pepper
1 firm ripe avocado
8 ounces Roma tomatoes- chopped
1 (15 ounce) can black beans
1 (15 ounce) can black-eyed peas
1 (11 ounce) can corn kernels
2/3 cup sliced green onions
2/3 cup chopped cilantro
Salt to taste

Options:

Red onion vs. green onions
fresh diced jalapeno
red and/or green bell pepper diced
splash of lime juice

Directions:
Directions:
Whisk the wine vinegar, hot sauce, oil, garlic and pepper in a bowl, Add the avocado (cut into small chunks) and toss gently to coat. Wash and drain black beans, black-eyed peas, and corn and stir in with tomatoes, green onions and cilantro. Season with salt. Serve with tortilla chips.
