3 medium onions-- chopped
4 cloves garlic
3 T oil
1 t paprika
1/2 t allspice
1/4 t dried crushed red pepper
3 1/2 c chicken stock
1 1/2 c red wine
3 bay leaves
5 lb brisket
6 oz dried apricots or 1 c pitted prunes (actual recipe callls for both)
3 lb yams-- 1 1/2" cubes
6 carrots-- 1 1/2" cubes

preheat oven to 325º

In dutch oven, heat oil, saute onions and garlic (15 min). Add paprika, allspice, red pepper, stir for 3 min. Add chicken stock, wine and bay leaves, boil 10 min. Sprikle brisket with paprika and rub in. Add to pot fat side up. Add apricots and/or prunes. Cover and bake for 1 1/2 hours. Add yams and carrots. Cover and cook another 2 1/2 hours. Let stand 20 min. Store or slice and return to pan.

If you want to leave out the yams and carrots, no problem. It will still be delicious. Sometimes I take out the brisket and slice it, then put back in the pan and continue cooking for another hour or so.
