½ c. white seedless raisins
1-3/4 c. sifted cake flour
1 tsp. baking powder
¼ tsp. salt
½ c. butter
¾ c. sugar
5 egg whites, unbeaten
¾ c chopped candy pineapple
1 c. chopped pecans
½ tsp. almond extract
½ tsp. vanilla extract

Soak raisins in apple juice for 2 to 3 days to make 1 c soaked raisins.
Sift flour once and measure. Add baking powder and salt and sift together three times.
Cream butter, add sugar gradually, and cream until light and fluffy.
Add egg whites, one at a time, beating thoroughly after each.
Add fruit, nuts, flavoring; mix well.
Add flour, a little at a time, beating after each addition until smooth.
Bake in a loaf pan which has been greased, lined with heavy paper and greased again.
Bake in slow oven (300 degrees) about one hour 15 min or until done. For loaf cake, use pan 8 x 4 x 3 which serves 8-10 persons.
