4 bell peppers, any color or a combination
1 pkg turkey store hot or sweet lean Italian sausage, casings removed
1 can (15 oz) Italian-style or regular chopped tomatoes
2 Tbsp chopped fresh basil or 2 tsp dried basil
1 can (16 oz) cannelli beans, rinsed and drained
½ cup grated Parmesan or asiago cheese (can use light Italian cheese mix instead)

Heat oven to 350°. Cut top of pepper, discard seeds and veins. Cook in boiling salted water 5 to 6 minutes or until crisp-tender; drain well and place in a 9x13 baking pan. Remove sausage from casings; crumble into skillet. Cook 4 minutes, stirring occasionally. Add tomatoes and basil; continue to cook 4 minutes. Stir in beans; heat through. Mound mixture into peppers. Sprinkle cheese evenly over filled peppers. Bake about 25 minutes or until filling is hot and peppers are tender.
