3 c. fresh corn kernels (6 ears)
1 tbsp. olive oil
1 c. frozen baby lima beans, thawed
1/4 c. diced roasted red bell pepper
1 tbsp. fresh basil leaves, cut into strips
1 tbsp. lemon juice
3/4 tsp. salt
1/4 tsp. dried crushed red pepper

Directions:
Directions:
Saute corn in hot oil in large skillet over medium-high heat for 3 minutes or until tender; add lima beans, and cook 2 minutes. Remove from heat, and let cool 10 minutes. Toss together the corn mixture with the rest of the ingredients. Cover and chill for 1 hour.
