2 ounces Flor de Cana rum
25 mint leaves, muddled
Zest of 1/3 grapefruit
3/4 ounce lime juice
1 ounce simple syrup (see note)
1 ounce soda
Ice
Mint sprig and grapefruit peel for garnish.

Directions:
Directions:
Place ingredients, except soda, ice and garnishes, in a cocktail shaker and shake for 6 seconds. Double strain. Serve over ice in a Tom Collins glass. Top with soda and garnish with mint and grapefruit.

Note: To make simple syrup, combine 1 cup water and 1 cup sugar in a medium saucepan. Bring the mixture to a boil and let the sugar dissolve. Remove from heat and allow to cool. Simple syrup can be stored for a month.
