1 can (1 lb. 4 oz.) sliced pineapple
2 Tbsp. cornstarch
1/2 c. apple cider vinegar
1 tbsp. soy sauce
1/2 c. sugar
1/8 tsp. ginger
1 chicken bouillon cube
1 green pepper cut crosswise
4 large boneless skinless chicken breasts

Directions:
Directions:
Drain pineapple and reserve syrup. Add enough water to syrup to make it 1 1/4 cups. In sauce pan, combine syrup, cornstarch, cider vinegar, soy sauce, sugar, ginger, and bouillon cube. Bring to a boil and boil for 2 minutes.
Place chicken in 9x13 glass baking dish and pour boiling mixture over the chicken. Bake uncovered for 30 minutes at 350º. Place pineapple slices and green pepper ont top and then bake for 10 to 15 minutes longer.
7. Serve with white or brown rice.
