1 cup butter, softened
2/3 cup white sugar
1 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
2 3/4 cups rolled oats
1 cup raisins

Preheat oven to 375 degrees.
In large bowl, with an electric mixer, cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually, by hand, stir into butter mixture. Stir in oats and raisins. Drop by teaspoons onto ungreased cookie sheets covered with parchment paper.
Bake 8 to 10 minutes in the preheated oven, or until golden brown. Cool slightly; remove from sheet to wire rack. Cool completely.

The secret to these cookies is to stop using the mixer and switch to a wooden spoon when you start to add the dry ingredients.
These are by far Jacob’s favorite cookies. He is something of a purest and prefers only raisins added to his cookies. However, if you are feeling like being an adventurist, go ahead and add any of the following: chocolate chips, bacon, chopped nuts, and dried fruit. Just kidding about the bacon.
